In this Chinese recipe, the chicken is fried but it is very very rare for me to make fried foods in my kitchen so I made it in the oven. Obviously the flavor will never be the same but I don't care. The result is good and less caloric (well, if we turn a blind eye to the 1/2 cup of sugar that we bring...)

    • Cut the chicken into pieces of about 4 cm, you can't make them bite-sized because then they go in the oven, well, even if they were fried they don't get small either. This recipe is the version of lemon chicken, a famous Chinese recipe:

    •Put it in a freezer bag, then we will add the marinade.

    • In a bowl, mix all the marinade ingredients and mix well until the sugar is well dissolved.

    • Reserve 3/4 of this mixture and put it in a saucepan. Pour the rest over the bag with the chicken. You can also put the chicken in a bowl with this mixture and cover it with film. Keep it in the refrigerator for about 30-60 minutes, no more.

    • In a small glass, dissolve the cornstarch with the water and set aside. The 3/4 cup that we have put in a saucepan, bring it to a boil and then add the cornstarch mixture. Cook until the sauce thickens and is shiny (I can't find another term to describe it). Optionally and once off the heat, you can add strips of orange peel and dried chilies but as decoration since the flavor is not affected by the sauce. I went from doing the latter. You should have about 1 and a half cups of the sauce. Reserve it.

    • Take the chicken out of the refrigerator, strain the marinade and dry the chicken with a kitchen towel:

    In a deep plate, put the egg whites and beat them. In a plastic bag, put the flour, baking soda and cayenne. It mixes.

    • Pour the chicken into the egg whites and coat them well. Then they are added in batches to the plastic bag, the end is twisted and turned around in the air, the bag is massaged... in order to cover the chicken well with the flour or cornstarch, whatever. that you use.

    • The coated chicken is placed on a baking tray covered with baking paper. The oven will have been heating up to 190º.

    • Put the tray in the oven for 25 minutes. Halfway through, the tray is rotated so that the pieces that were at the bottom are closer to the entrance of the oven.

  • • Bring the sauce to a boil and add the chicken pieces. It is not a very sauced chicken.

    • Served with white rice.

    I made more sauce than indicated to store it for a few weeks with other types of grilled meat.
