Preparation

  • TRADITIONAL PREPARATION

    Soak the gelatin sheets in cold water.
    Put the water, cream, sugar, whole and powdered milk and invert sugar in a saucepan.
    Heat without stopping stirring until we see it start to boil. Lower the heat, it should not boil.

    Add the drained gelatin sheets and stir over low heat for about 2 minutes until dissolved.
    Pass through a chinois or sieve to avoid lumps. Stir while it cools for about 8 - 10 minutes.

    When it has cooled completely, add the lemon juice and beat to hom*ogenize since it can be cut by the lemon, nothing happens, you beat it and that's it.
    Put in the refrigerator for a few hours until it cools. Beat with a whisk in case there are lumps and take it to the freezer, where we will take it out several times to beat it and thus prevent it from crystallizing.

    If you have a refrigerator, put the ice cream from the refrigerator directly into the refrigerator and when it has the consistency you want, store it in a bowl with a lid and put it in the freezer.

  • THERMOMIX PREPARATION
