Preparation

  • TRADITIONAL PREPARATION:
Dissolve the yeast in the warm water

Make a volcano with the flours and put the rest of the ingredients in the center.

Knead until you get an elastic dough

Make a ball, paint it with olive oil and let it rest, covered with a cloth, for an hour.

Place an oven-safe bowl filled with water at the bottom of the oven to generate steam and preheat the oven to 220ºC. This is important so that the breadsticks are crispy.

Degas the dough by gently flattening it with your hands and stretch it with the rolling pin until it forms a rectangle of approximately 20x30 cm that we brush with olive oil.

Cut thin strips with a sharp knife or pastry cutter. I left a thickness of approx 0.5 cm

We spray cold water on the walls of the preheated oven (so that a cloud of steam is generated) and put the tray in. Bake for about 15 minutes, every 5 minutes we will spray on the walls of the oven to generate more steam.

  • THERMOMIX PREPARATION:
Put the yeast, oil and water in the glass. Program 1 minute 37º Speed 2

Add the rest of the ingredients, program 15 seconds at speed 6 and then 2 minutes Closed glass position Spike speed.

Make a ball, paint it with olive oil and let it rest, covered with a cloth, for an hour.
